Easy Avocado Egg Salad

I’m trying to eat healthy foods. I’m trying to avoid cookies. I’m trying to work out. I’m ALWAYS hungry!  Going to the gym and making good food choices is really hard. Especially when I’m working full-time and a little bit lazy when it comes to working in the kitchen. I can barely get myself to work and the gym, to come home and prepare a healthy meal seems a really daunting task sometimes.

I am obsessed with easy and filling snacks. Right now, my main obsession is avocados. Yum. I could eat those suckers all day long.

This morning’s breakfast may be my new favorite thing.

Quick and healthy snacking

Seriously. Here’s the amazingness of it: SO SIMPLE. SO YUMMY!

Ingredients:

  • 1 hard-boiled egg
  • 1/2 avocado
  • salt
  • pepper
  • 1 tsp. mayonnaise
  • (That’s it!)

Here’s my egg. I peeled it. (I know brilliant, right?)

Add the egg to a bowl with some sliced, ripe avocado.

Toss in some salt, pepper and the smallest dollop of mayo.

Mix.

Spread on toast.

Devour.

I’m so happy right now.
