Do you know what this weekend is?

I am so excited for Sunday night. Are you?

I’m a super nerd. I know this. However, I’ve been marking weeks off my calendar in preparation of the new season of Game of Thrones. Those of you who know a bit about the story and follow my blog might be a little bit surprised by my obsession given the violence encapsulated in this story….but if you can get past that, the story line is addicting, the character development is fabulous and I am totally engrossed in the “what’s going to happen next” feeling I get as I watch it.

Not only that, but it is something that my husband and I like to do together. We love to get comfortable on the couch and line the coffee table full of yummy snacks as we discuss what happened in the last episode and make predictions about what will happen next. In the past we’ve even held a GOT premiere party with all of our friends, eating themed snacks in preparation for the show to air. Nerdy? Yes, but so much fun.

Crockpot Sausage, Kale and Lentil Soup

I just love Crockpot recipes. There is something so peaceful in knowing that there is a batch of something yummy simmering away in the slow cooker while I’m at work. Coming home to a healthy and easy meal is one of life’s simple pleasures.

This week I made a really wonderful Sausage and Lentil Soup in my crockpot. It was a super easy week night dinner idea that made both my husband and I happy. I had enough leftovers to take to work for lunch the next day and it was even better the next day! It is also super healthy and filling,  so it’s a win-win.

Here’s what you’ll need:

  • 64 oz of chicken or vegetable stock. (I used Costco brand chicken stock)
  • 1 -can diced tomatoes
  • 1- can black beans (rinsed)
  • 2 Cups Dry Green Lentils
  • 2 cups chopped and de-stemmed Kale
  • 2 cloves diced garlic
  • 2 cups chopped carrots
  • about 1 celery stalk chopped
  • 1 lb. crumbled and cooked sausage, drain grease off first by cooling on a paper towel (use your favorite kind)
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp ground cumin
  • 1 tsp black pepper
  • 1 tsp garlic salt
  • 1 tsp table salt
  • 1 tsp red wine vinegar

1. Place carrots, celery, garlic, canned tomatoes, canned beans, lentils, sausage, bay leaves, thyme, cumin, pepper, salt, and garlic salt into crockpot.

2.  Pour Chicken or Veggie Stock over everything and stir gently.

3. Cover and cook on high for 4 hours or on low for 8 hours.

4. About 15- 20 minutes before eating add chopped Kale and vinegar to crockpot. Stir. Place the lid back on and allow to cook for those last few minutes to properly wilt kale.

5. Enjoy with salad and fresh bread. Or topped with a dollop of sour cream. Yum!

Getting Bikini Ready:

I want to be able to lose a little weight before my friend’s wedding at the end of the month. We are also planning a vacation in June so I’d like to be bikini ready before then. All that being said, we have been eating a whole lot of chicken lately. Pineapple Chicken Quinoa Salad

I’m immediately drawn to recipes that are easy, or that use some of our weekly staples anyway. In our house we eat a ton of quinoa and so this recipe over at Layers of Happiness which combines my love of quinoa with a sweetly satisfying pineapple addition made me super happy. Jen and Emily have a bazillion more yummy looking dishes I want to test drive too! I can’t wait to try this one. And, it only takes about 20 minutes to make which is my kind of meal! This looks perfect for lunches!

Hummus Crusted Chicken

Then I stumbled across Sara’s blog which details her weight loss journey and her healthy lifestyle choices. I love this hummus crusted chicken idea, and although she chooses to make her own hummus in the recipe, for ease of weeknight meal prep I will most likely use the hummus we already have in the fridge. Yum!

Lastly, this week I’m going to give this Buffalo Chicken Chili a try. Tammy at Organize Yourself Skinny makes it sound so easy and so yummy! She’s also got a bunch of other ideas, tips and recipes for healthy living and is super inspirational!

I’m going to work on adapting it so that I can turn it into a Crockpot Recipe instead of one that I have to prepare when I get home from work. Although I do like the idea of making it ahead and turning it into a freezer meal as well.

Beyond Chicken Soup: How to Survive a Weekend When You’re Sick in Bed

I spent the weekend sick on the couch with strep throat. I don’t know if I’ve ever experienced such a terrible sore throat. Adults are not meant to get childhood sicknesses, my body did not like that! I thought I would love spending whole days curled up with hot tea and hours of Netflix stretching out before me…. But after a few hours I was stir crazy and bored. Unfortunately, I didn’t have the energy to move much, and felt terrible. It was a vicious circle. So I came up with these ideas to get me (and you) through a sick spell, or a rainy day…

  1. Plan your meals for the week by flipping through rarely used cookbooks and stopping on random pages. I have the most beautiful cookbooks, with hundreds of mouth-watering recipes for easy, week night meals…that I have never, ever looked at. WithPinterest and Google and a busy 40+ hour work week, who has time to flip through cook books when I can just type what I’m looking for into my phone andKAPOW there’s the recipe right in front of me? I loved having some uninterrupted time to fawn over the glossy pages and beautiful pictures in the cookbooks on my shelves.

  2. Write a letter to your favorite teacher. I recently received a nice note from a former student as she is about to graduate from college. She mentioned how I always made her feel special and she appreciated all the time I took to make sure she came to school, and how encouraged she was by my attitude and genuine concern for her well-being. This made me think about how much some of my former teachers meant to me, and how nice it is to get real mail in the mail box.

  3. Make your favorite “sick-time” beverage. For me, it’s a hot toddy, but you can skip the alcohol and just make a fabulous cup of tea too!

My hot toddy recipe of choice:

  • 1 oz Irish whiskey
  • 1 tea bag steeped in 1 cup of hot water (I used a plain black tea for mine, but any herbal blend would be good too!)
  • 1 tsp. honey
  • ½ tsp ground ginger, or slice of fresh ginger steeped in hot water
  • 1 wedge of lemon squeezed, then steeped in tea
  • Stir with a cinnamon stick
  •  Mix all ingredients together. Drink. Repeat.

 

  1. Start a blog. Or Read a blog. Nothing hits closer to home for me than this. I love when people read my blog. So I spent some time spreading the love this weekend. Bloggers love visitors and comments, and new readers, and feeling important. (Maybe we are all a little self-centered….or maybe we just want to share incredibly helpful and interesting things with all of you!)

  • Of course I couldn’t help but mention Kathryn at Singing through the Rain. She’s not only been super inspiring to me personally, and hundreds of other military spouses, but she’s also been supportive of my blogging and featured me as a guest blogger on her site a few times. (Maybe I’m a little biased, but I heart her). Aside from that she too has a newly found love of Colorado. (are you sensing a theme?)

 

 

  • My current guilty pleasure is to live vicariously through Brittany and Ryan over at In Some Places as they chronicle their lives as teachers in foreign countries. Someday perhaps I’ll get the nerve up to just chase that dream, until then, I’m going to read on.

 

  1. Lastly, I know this sounds silly. But watch your favorite childhood movie. I am not kidding, I curled up with my hot toddy, my blog reading list, my puppies and The Brave Little Toaster. I suffered through the weekend, but I loved these quiet moments with some of my favorite things.

Khaleesi’s Dragon Eggs (Scotch Eggs)

You may now call me the Kitchen Khaleesi.

I mentioned that I also made Dragon Eggs for the Game of Thrones Season 5 opening episode, in addition to my yummy Lemon Cakes. We were, perhaps, a little bit excited about the new season and are completely obsessed with GOT so we wanted to enjoy our all day marathon of the show with appropriately themed snacks. I think Daenerys Targaryen would be proud.

You will need:
2 lbs of your favorite pork sausage (we used a local hot Italian sausage for ours.)
6 hard-boiled and peeled eggs
1 egg slightly beaten
2 cups bread crumbs (we used panko because I love them)
1 cup flour
Salt, pepper, spices to taste
Olive oil

Directions:

1. Preheat oven to 350 degrees.
2. Divide the sausage into 6 equal parts and pat each into round flat disc. (Think: small meat pancake.)

3. Dip each peeled, hard-boiled egg in water and then lightly coat in flour.
4. Place each in center of meat patty and wrap patty entirely around egg, encapsulating it in sausage. This takes a little finesse. Make sure to pinch the meat together so that it completely encloses the egg. Once it’s completely wrapped you can press the sausage firmly around the egg to make sure that there is no air between the egg and meat layers. Squeeze firmly to ensure that the sausage stays in place during cooking.

5. Then, roll each sausage ball into the flour coating. (I seasoned the flour with seasoned salt and pepper first).
6. Then dip the sausage ball into the beaten egg.
7. Roll the sausage into the bread crumbs.

8. Place on a foil lined cookie sheet and bake of 30 minutes. (Turn once during baking.)

9. Once you remove them from the oven, if they are not crisped to your liking you can toss them into a hot frying pan with a tablespoon of olive oil to brown the outside. This leaves the coating crunchy and yummy.

10. Serve hot or cold with mustard or your favorite dipping sauce. Yum!
